The raw oysters served at The Oyster Bar Kobe are only those that have passed our own inspection standards, which are much higher than those of the Ministry of Health, Labor and Welfare.
Oysters take in and expel 20 liters of seawater per hour.
Taking advantage of this ecology, we purchase live, raw oysters every morning that have been placed in sterile seawater for 38 to 48 hours.
